2014 String beans
My father canned a lot of string beans. Now that he is gone I fed my mom all the 2015 string beans. Could the ones from 2014 make her sick? Not sure if it is even worth the risk but they look nice.

We do a lot of pressure canning, and as long as the product is properly canned and stored it will be fine. Over the years product texture will break down and color changes. This makes the product less palatable. But it is safe. If you have any doubts go ahead and cook the product after you open the jar.
